Guest Post: Asheville Girls Vanilla Cream Puffs


Sharon Cooke from Asheville Girls Vanilla has agreed to share her Vanilla Cream Puff recipe with us today...and she's offered to send one lucky winner a bottle of her homemade vanilla extract!  So I'll turn it over to Sharon to show you how to make homemade cream puffs and then we'll tell you how to enter to win.


You  can make your pastry cream the night before, put it in the fridge overnight, and then make the cream puffs first thing in the morning.

Vanilla Pastry Cream

2 cups milk
1/4 cup white sugar
2 egg yolks
1 whole egg
1/4 cup cornstarch
1/3 cup white sugar
3 tablespoons butter
1 1/2 teaspoons Asheville Girls Vanilla

In a saucepan, stir together the milk, 1/4 cup of sugar. Bring to a boil over low/medium heat. While waiting for the mixture to get hot, in a medium bowl, mix the egg yolks and egg. Stir together the remaining sugar and cornstarch then stir them into the egg mixture until smooth.

When the milk comes to a boil, drizzle it into the bowl in a very thin stream while whisking so you do not cook the eggs. Put the mixture back into the pan and slowly bring to a boil, stirring constantly.

When it thickens, remove from the heat. Stir in your butter and vanilla completely. Cool completely before using; cover the pastry cream with plastic wrap all the way down touching the cream to prevent from forming a skin.

Pastry Shells

1 cup of water
1/2 cup butter
1/4 teaspoon salt
1 cup all purpose flour
4 eggs

Preheat your oven to 375 degrees, spray a large baking sheet with cooking spray or line your pan with parchment paper.

In a medium saucepan, heat water, butter, and salt, over medium heat until butter melts and it boils. Remove from the heat; add the flour all at once. With a wooden spoon stir vigorously until the mixture forms a ball, and then add eggs one a time beating well after each addition until well mixed.

Use a cookie scoop (large or small) and line your pan with scoops of mixture.

Bake 30 minutes or until golden brown, remove to baking racks to cool.

I use my electric knife to slice off the tops, (be careful) but you can use a bread knife as well.

Fill the insides with pastry cream then put the tops back on and drizzle with chocolate ganache.

Chocolate Ganache

1 cup of semi sweet chocolate chips
1/2 cup heavy cream
1 tablespoon butter

Pour your chocolate chips in a bowl.

In a small pan heat cream and butter over medium heat, when it starts to boil, take off the heat and pour over chocolate chips. Wait a couple of minutes and whisk the mixture until smooth. Drizzle over your cream puffs.

These are very easy to make and use most ingredients you already have on your shelf!!
